Our friend Nicoletta, has always been describing how great roasted chickpeas can get if thyme, preferably organic, is added to her recipe! Some days ago, she offered to make her specialty, and show us all the steps needed for a delicious dish. The easiness of the recipe, but also the exceptional taste of the final result will impress you for sure!
This version of the recipe includes feta cheese. Nevertheless, the course is also vegan friendly, as long as you don’t include the feta cubes. Nicoletta suggested that you should never stop experimenting with your recipes. Therefore, feel free to follow your instinct and add any further ingredients that will make you and your beloved ones happy.
What you will Need is:
1 big Onion
2 cloves of Garlic
juice from 2 Tomatoes
1.5 tbsp of Tomato Paste (Tomato Purée)
150g of Feta Cheese in cubes (optional)
500g boiled Chickpeas
2g (black) Pepper
What is great in our recipe is how simple the execution is! Follow these five simple steps and you will get the perfect result:
- Chop the onion and garlic into small pieces and sauté them with olive oil until they are tender.
- Add all the ingredients, expect from the chickpeas, and add 2 glasses of water. Let it boil slowly for 20 minutes. While waiting, make sure that you preheat the oven using the grill at 200°C (400°F).
- When the sauce is ready, mix it with the chickpeas in a deep fireproof roaster/oven dish. You can also add the feta cheese cubes, if you fancy.
- Add some thyme.
- Place the roaster/oven dish in the oven at 180°C (350°F) and wait for 20 minutes.
The chickpeas are ready to serve. Don’t forget to garnish with a bit of extra organic thyme!
